1.    Shrimp ratatouille



  • Oliver oil 2 table spoon
  • Red onion 1 table spoon roughly chopped
  • Garlic 3 cloves, minced, egg plant 1 medium cut into in 1 inch cubes

  • Red beau pepper 1 cut into 1 inch pieces

  • Almonds ¼ cup, sliced and toasted

Method to prepare:

Heat 2 table spoon of oil in a heavy pot over medium heat

Add the onion cook five minutes

Add the garlic cook 2 minutes

Add the egg plant

Zucchini and bell peppers cook for 5 minutes

Add the thyme, tomatoes, olives, red pepper flakes, salt and black pepper

Reduce heat to medium low, simmer for 20 minutes in a large non stick skillet, then heat the remaining oil and add shrimp and cook for 2 minutes on each side, stir shrimps into ratatouille.

Spoon onto plates, garnish with mint and almonds.

2.    Penne with Herbs, Tomatoes and Peas



  • Penne pasta 8 ounces, uncooked
  • Green peas, cup
  • Extra virgin olive oil 3 table spoons
  • Garlic cloves 6 thinly sliced
  • Cherry tomatoes 3 cups halved
  • Salt ½ tea spoon
  • Freshly ground black pepper ¼ tea spoon
  • Fresh basil leaves 1/3 cups thinly sliced
  • Fresh flat leaf parsley 3 table spoon
  • Chopped fresh parmesan cheese 1 ounce shined (about ¼ cup)

Method to prepare:

Cook pasta according to package directions, omitting salt and fat.

Add peas during last 2 minutes of cooking, drain heat a large non stick skillet over medium low heat.

Add oil, swirl to coat

Add garlic for minutes or until garlic begins to brown, stirring occasionally increase heat to medium high

Add tomatoes to pan, cook for 3 minutes or until thoroughly heated, stirring occasionally, stir in basil and parsley.  Sprinkle with cheese and serve.

3.    Salmon with Minty Vegetables

A healthy option that serves 4, takes 10 minutes to prepare and 10 minutes to cook.


  • 750gram Small New Potatoes Thickly Sliced
  • 750gram Peas And Beans
  • 3 Table Spoon Olive Oil
  • Zest And Juice Of 1 Lemon
  • One Cup Mint, Leaves Only
  • 4 Salmon Fillets About 140gram/ 50z Each

Method to prepare:

Boil the potatoes in a large pan or about 4 minutes, turn down the flame and add in the peas and beans bringing backup to boil

Carry on cooking for another 3 minutes until the potatoes and beans are tender

While you wait, whiz and mint in a blender to make a dressing over, cover with cling film, pierce, then microwave on high for 4 to 5 minutes until cooked through,

Drain the vegetables, mix in with the hot dressing and cooking juices from the fish.

Serve the fish on top of the vegetables and enjoy while hot.

If you have time to spare, use the oven instead of microwave by wrapping each filet in foil and popping in to a pre-heated over at 160 F for 15 minutes or until cooked.

4.    For the chicken lovers


20 minutes preparation time and 45 minutes cooking time, serve for 4 people


  • 1 tbsp olive oil
  • 1 onion chopped
  • 500g boneless and skinless chicken thighs
  • 300g small new potatoes
  • 425 mil low-salt vegetable stock
  • 350g broccoli, cut into small florets
  • 350g spring greens, shredded
  • 140g peas
  • 1 bunch spring onion, sliced 2 tbsp green pesto

Method to prepare:

Heat the oil in a large pan and then add onion, gently frying for 5 minutes until softened.

Throw in the chicken and fry until lightly colored.

Add in the potatoes, stock and plenty of freshly ground black pepper, bring to the boil and cover, lets simmer for 30 minutes until the potatoes are tender and the chicken s cooked.

Mix in the broccoli spring greens, peas and spring onions stir well and return to let it boil.

Cover it up again for 5 more minutes before you stir in the pesto and heat through.

Enjoy on its own drizzle over some rice or bread.

5.    Exotic Hereby Lamb Burgers with Beetroot Mayo

10 minutes to prepare and 15 minutes for cooking, serve 4 people


  • 400g lamb mince
  • 1 small red onion grated thinly sliced

Method to prepare:

Mix the lamb, grated onion and herbs in a bowl with some seasoning (salt, pepper) to taste and then divide the mixture into 4 shape burger patties.

Heat a griddle pan until hot, rub the burgers with oil and cook for 5 to 6 minutes on each side or until cooked fully

  • 2 Eggplant, 2 onions

  • ½ Kg mince
  • 2 tbsp crushed red Chile
  • ½ tbsp salt
  • 1 tbsp black pepper
  • 1 cup tomato puree
  • 2 tomatos boiled
  • 50 gram butler
  • 4 tbsp olive oil

Ingredients for white sauce:

  • 50 gram butler
  • 2 tbsp flour
  • 1 glass milk
  • 1 Egg yolk
  • 100 gram cottage cheese
  • 100 gram cheddar cheese nutmeg a pinch

Method to prepare:

Heat oil in a pan, fry the egg plant until lightly browned and soft, remove from pan and add add butler, ginger garlic paste onion and mince, fry well till water dries.

Add chopped boiled tomatoes, red chili, salt and tomato puree, fry on high flame stirring to prevent, sticking. Turn the flame off after all the water has dried.

For Sauce

In a pan pot butter, flour, mille, egg yolk, and a pinch of nutmeg, Cook for few minutes.

Now an oven proof dish spread mince mixture, cover with egg plant slices and carefully pour white sauce on top.

Lastly sprinkle cottage cheese and cheddar cheese, bake for 30 minutes on 200 degrees.

7.    Pesto grilled pizza 



  • Prepare 1 pound pizza dough
  • 2 tbsp olive oil
  • 1 small red bell pepper slice into short strips
  • 8 ounces shredded Fontana cheese
  • 3 hot Italian sausage links, grilled diagonal sliced
  • 1 cup ricotta cheesy
  • ¼ cup refrigerated basil pesto,

Method to prepare:

Heat oven to 450 degrees, preheat grill divide dough ball into 4 pieces roll each into a 6-inch crust, brush both sides lightly with oil, and carefully place crust on grill and heat for 1 to 2 minutes or until light golden brown.

Flip with spatula and grill on other side for 1 minutes, remove from grill and repent with remaining crusts.

Combine 1 table spoon oil, peppers, and onion on a nonstick skillet, heat over medium high, heat for 2 minutes or until tender crisp, top grilled crust grilled evenly with shredded Fontana cheese, sliced sausage and pepper mixture, arrange on baking sheets and heat in oven for 5 to 8 minutes or until golden and bubbly hat, remove from oven.

Spoon dollops of ricotta evenly over baked pizza, season lightly with salt and black pepper drizzle pesto over ricotta, slice each pizza.

8.    Chicken cheese cups



  • Spring onion 2 tbsp
  • Cabbage chopped finely
  • Yogurt 6 tbsp
  • Cheese help cup finely grated
  • 1 egg
  • Boiled chicken pieces cut into small five pieces
  • Salt, black pepper according to taste
  • Ajino moto also called Chinese salt
  • Samosa strips each cut into three equal squares

This recipe needs a pastry baking tray with six cups in it

Method to prepare:

Cut each rectangular shape samosa strip on three equal squares; now apply oil on the base of each pastry cup in a baking tray.

Place one square of samosa on the other square such that the angle of one comes right in the middle if one side of other.

Keep applying oil between the samosa squares

Place three samosa squares on the top of each other such that it gives you a floral shape.

Now mix rest of the ingredients put 1 tbsp of this paste in each floral samosa cup.

Put a drop of tomato sauce in the middle to beautify.

Bake in the oven at 150 Celsius for 20 minutes.

Keep checking with fork if the mixture has cooked and cup turn light golden.

  • 3 eggs beaten
  • 3 bananas mashed
  • 4 ounce caster sugar
  • 8 ounce soft butter
  • 10 ounce self raising flour
  • ¼ cup milk
  • ½ cup chocolate chips
  • 1 tbsp baking powder
  • 1 tbsp vanilla essence

Method to prepare:

Grease a large loaf tin with butter and line the base with butter paper.

Beat pepper, sugar and vanilla together in a bowl until creamy; gradually add an egg, folding in the sieved flour and baking powder mixture, beat until smooth and creamy.

Add the bananas milk and chocolate chips and fold all together, transfer the mixture in to the prepared tin and bake in a pre-heated oven 180 degrees for 55 minutes.

  • 3 egg
  • ½ cup caster sugar
  • ¼ cup corn flour
  • 1 tbsp baking powder
  • 15 gram butter
  • 3 tbsp hot water
  • ¾ cup white flour
  • For chocolate icing:
  • ½ kg icing sugar
  • 1/3 cup cocoa powder
  • 15 gram butter
  • ½ cup milk

Method to prepare:

Melt the butter in a pan with hot water, in a meantime beat the eggs until fluffy, gradually beat in the sugar until the mixture thickens and the sugar completely dissolves, then gradually beat in white flour.

Then add the baking powder quickly folds in the melted butter and hot water in the mixture pour the better in a greased baking tray.

Bake in a pre-heated oven at 350 f for 30 minutes.

For chocolate icing:

In a double boiler, shift the icing sugar cocoa powder.

Add butter, milk and stir with a wooden spoon, mixing thoroughly, continue stirring until the icing sugar coats the back of the sugar.

For assembling:

Cut the cake into squares, hold each piece of cake with a fork then dip it into the icing, hold for two minutes  to drain off the excess chocolate, then coat each piece in a coconut powder ,Leave the cake piece cake to dry off.

Lamington is ready to eat.
